About the Recipe
When I ask my husband what he wants for his birthday, or an anniversary, or really any day at all... it's crepes! They're perfect for stuffing, folding, topping; savory or sweet. What's not to love?
Ingredients
1 cup all-purpose flour
1 Tbs. granulated sugar, optional
1/4 tsp. Kosher salt
2 large eggs
3/4 cup whole milk
1/4 cup + 2 Tbs. water
2 Tbs. unsalted butter, melted
Melted unsalted butter or cooking spray for cooking
Preparation
In a medium bowl, whisk flour, sugar and salt to combine.
Add eggs and 1/2 cup milk; whisk until smooth.
Add remaining milk and 1/4 cup water and whisk to combine. Add butter and whisk until smooth.
Strain mixture and refrigerate for 30 min. or overnight (optional).
Whisk in 2 Tbs. water before using.
Heat an 8" pan over low to medium heat until warm when you hover your hand over. Brush lightly with melted butter or coat lightly with cooking spray. Add 1/4 cup batter to the pan and rotate until coated.
Cook crepe over low to medium heat until the edges begin to brown very lightly. Use a small spatula or your fingertips to lift and flip the crepe. Cook remaining side for 15-30 sec.; transfer to a plate or baking sheet.
Repeat with remaining batter.
