Let me just tell you... I've been snagging these cookies out of the freezer all week... and I'm not mad about it. Mom deserves a treat now and again.
These are just as good as they look. Chewy, crisp along the edges, crunchy with those bits of raw sugar on top... and so creamy with a perfect pumpkin cheesecake center.
